It's that time of the year again, the kiddos are off to school. Mother's every where are jumping for joy. As much as we love that our children are going back to school because we will get a little peace in our home.. it still doesn't alleviate the stresses of packing their daily lunches! My daughter doesn't like to eat the lunches that the school provides and prefers that I pack her lunch. I'm ok with that. I like knowing exactly what she is eating during the day..or what she has chosen not to eat. I don't like to get up the morning of school and making her lunches or spending my evening the night before prepping her lunches. Let's face it, around 8:00pm the house starts to unwind and so do I. I like to prep my daughter's lunches for a whole month on a Sunday! I decided the other weekend to prep. In 20 minutes, I was able to make 12 peanut butter & jelly sandwiches. (Homemade uncrustables) and 12 mini turkey & cheese hoagies. All individually wrapped and placed in gallon freezer bags for storage! In the mornings before school , I will grab a sandwich of her choice out of the freezer to pack in her lunches as well as a veggie and fruit of her choice. I typically give her crackers and/or a sweet item like fruit snacks, go gurts , raisins and on occasion 1 homemade cookie as a treat. This will save so much time for me in the morning to be able to just grab what she chooses and go! The cold sandwiches from the freezer will thaw out before lunch and will also help to keep the rest of her lunch cold. I also like to do that with her go gurts too. Keep them in the freezer and let them thaw throughout the morning in her bag.
When making the mini hoagies just add meat and cheese. I use real sliced cheese, not the processed. When ready to pack, you can individually pack lettuce, tomatoes , pickles etc. This is also great for adults! Instead of mini hoagies , make them full size! Pack any condiments of your choice!
Possibilities are endless with these! As well as the uncrustables! Instead of pb&j.. use pb and sliced bananas! Or Nutella with strawberries or bananas! All would freeze very well!
